Chemical preservatives are used in the manufacture of cheese that harms health of cheese consumers especially if used in high concentrations. Alongside that natural materials are very expensive. Consequently, the project tended to produce and use natural primers that have excellent properties in inhibiting and preventing the activity of pathogenic and cheese-damaged microbes. The application of the microbial protection primers for cheese factories works to produce safe milk products that will have a positive impact on increasing the profits of cheese companies in Egypt and on the national economy as a result of reducing the costs of treating injured ones from consuming unsafe products and increasing the export of dairy products and exporting those prefixes also. It is a prefix of protective bacteria or microbial protection and is used on an industrial scale to preserve dairy products. It has been proven that these prefixes improve the quality characteristics, increase the shelf life, and improve the taste and flavor properties of dairy products without any added preservatives.
